Pros:

1. Naturally, professional cooks or people with a passion for cooking gravitate towards gas and swear by the versatility of the flame heat. This is mainly due to the ease to gauge and accurately adjust the level of heat. It’s instant, visual and constant – no more guessing if the stove is on or off, if it’s on the right setting and you can leave food on the cooktop without continuing to cook. You can see why this is a major plus for homeowners who enjoy cooking.

2. Gas cooktops/stoves also produce a more even heat for cooking because the flames spread themselves along the bottom and sides of the pan. Therefore food is not only cooked faster but better thanks to the consistent heat.

3. Gas is inexpensive, abundantly available and clean burning. The operating cost of gas is less expensive than electric. A major bonus is if your home is already using natural gas – this offsets the high set up costs as your energy and working cost will be lower with a gas than electric.

Cons:

 1. The immediate concern using gas appliances is the initial costs. Because of the long term benefits, gas appliances are both more expensive to purchase and install especially if you don’t already have a gas line going to the kitchen.

2. Gas appliances are more dangerous than their alternative. Increased potential for gas leaks and if gas line is damages, a home can quickly fill with toxic and flammable gas. Also it isn’t the most family friendly option as children or pets are at greater risk to be burned with an open flame.

3. A minor drawback is baking results with gas ovens. Gas gives off moisture when cooking, creating a humid heat rather than the dry heat which is ideal for roasting.
